I confess to occasionally dining on foods that are not spiced with chile peppers. I know it’s a shocking admission, but here’s how the most recent incident occurred. My wife Mary Jane’s favorite TV cooking show is The Barefoot Contessa, starring Ina Garten. Ina had 2014’s #1 bestselling cookbook, Make It Ahead, so I gave it to MJ for Christmas. Then she surprised me for my birthday by preparing one of the more delicious meals I’ve ever eaten, Coquilles St. Jacques, which are scallops in a cream sauce. Scallops, as everyone knows, are the adductor muscles of a bivalve mollusk affectionately known as Pecten maximus. The dish was so incredibly tasty that it didn’t need chiles.
