Bacon and onions… they just go so well together. A clever combination of the two ingredients are bacon-wrapped onion rings. This is a barbecue classic by now, and the Web has countless variations on how to prepare them.

Our favorite way is to wrap the (sweet) onion rings with bacon strips – if necessary, fix strips with toothpicks. We grill them indirectly over medium heat in the closed grill, drip pans underneath the rings.

Meanwhile we mix 50:50 spicy-hot BBQ sauce with maple syrup. After 45 minutes or whenever the bacon is crispy, we brush the rings with that mixture and give them another 5-10 minutes on the grill.
